I had a good excuse to cook up something yummy for this week’s Nourish post: My friend Phoebe celebrated her birthday over the weekend with a little dessert party.
I was quite excited with the prospect of whipping up something sweet, as I have come across so many recipes I’d like to try but am loath to cook them without a reason, as that always winds up with me eating the leftovers.
I finally decided on a Rhubarb and Vanilla Mascarpone Tart that I spotted in my copy of the latest Your Home & Garden Magazine. Julie Biuso is one of favourite New Zealand food writers and this recipe is both beautiful and tasty.
I am very new to baking pastry blind. In fact, I am very new to making pastry full stop. I think I need A LOT more practice. It didn’t help that I don’t have a tart tin, and have been using a quiche dish… which I think is less than ideal. The tart case ended up a little wonky, but I think we should just call it quirky and leave it at that!!
The tart itself was a lovely and simple combination of flavours. It is always nice to embrace the seasons, and rhubarb kind of epitomises winter fruit for me. See the recipe below (click on the image to enlarge).
